A Time of Renewal

I love Spring!  Despite my horrible allergies, I LOVE this time of year!  I sat outside during the little warm snap we had a couple of weeks back and watched my kids play in the backyard.  The Martins were singing and swooping around, the baby calves were playing in the nearby pasture, and the sun warmed my dry winter skin.  I could not help but look at the trees and plants that seemed to be stretching their arms and sprouting their spring leaves and think to myself, “How can anyone NOT believe in God?”  

This time of rebirth and renewal just before Easter always gives me great pause to think about the circle of life.  After my father passed away suddenly and unexpectedly, I clung to the passage from Ecclesiastes regarding the time for everything under the sun: “There is a time for everything, and a season for every activity under the heavens: a time to be born and a time to die, a time to plant and a time to uproot, a time to kill and a time to heal, a time to tear down and a time to build, a time to weep and a time to laugh, a time to mourn and a time to dance, a time to scatter stones and a time to gather them, a time to embrace and a time to refrain from embracing, a time to search and a time to give up, a time to keep and a time to throw away, a time to tear and a time to mend, a time to be silent and a time to speak, a time to love and a time to hate, a time for war and a time for peace.” 

Days later I would find out I was pregnant with our first child after years of trying.  Talk about renewed hope!  She was born in the Spring, and though we spend our first Easter together in the hospital with complications, I knew without a shadow of a doubt how much God loved me. 

He loves you that much too!  Whatever season you may be in right now, it is only temporary.  We don’t always understand or have the privilege of knowing the purpose of our tears and trials, but God works all things together for good for those who believe in Him.  Hang in there, sweet friends, and hold on to hope.  A new day dawns every morning, ripe with possibility and new beginnings!  Just look around you at this beautiful Spring as it blossoms forth from a long, cold winter!

I am a native New Yorker, born and raised. After 21 years of living in the cement jungle, I felt compelled to move to my true home, the beautiful island of Puerto Rico. On this enchanted, Caribbean island I met my one true love, Jesus! Everything changed and what a wonderful journey it has been. My Masters is in “Life of Hard-knocks”! Gotta love it! I am a single mom supported by the most amazing and eccentric family! We love people & enjoy creating unforgettable memories! Healthy & Easy Recipe: Texas Caviar Ingredients:

  • 30 ounces canned, reduced-sodium black-eyed peas, drained & rinsed
  • 2 green onions, thinly sliced
  • 1 ear of corn, cut off the cob, OR 1 up fresh, frozen corn, thawed
  • 1 small bell pepper, yellow or red, seeded, stems discarded, diced
  • 1/2 cup fresh cilantro, chopped
  • 3 fresh jalapeno peppers, seeded, diced
  • 2 cups tomatoes, diced OR 14.5 ounce canned, no-salt-added, diced tomatoes
  • 3 cloves fresh garlic minced OR 3 teaspoons jarred, minced garlic
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons lime juice
  • 1/2 teaspoon lime zest
  • 1 teaspoon ground cumin
  • 1/8 teaspoon salt
  • fresh, ground black pepper to taste

Directions:

  1. In a medium bowl, combine the black-eyed peas, green onions, corn, bell pepper, cilantro, jalapenos, tomatoes, and garlic.
  2. In a separate bowl whisk together the olive oil, lime juice, zest, and cumin.  Pour over vegetables, add salt and pepper and toss together until vegetables are coated completely in oil blend.  Best if chilled for 2-3 hours.
  3. Serve as a side dish or with whole grain pita chips as s dip.
